Carrot Apple Bread!

I’ve been obsessed with my loaf baking pan & am constantly looking to bake more stuff in it. So I decided to try my hand at another bread – using carrot and apple. I found this recipe here but made a few changes. I also used my new spiralizer to cut the carrot and apple.


  • 1 large egg
  • 1/2 cup dark brown sugar
  • 1/3 cup vegetable oil
  • 1/4 cup granulated sugar
  • 1/4 cup lite sour cream
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • grated carrot (1 large)
  • grated apple (1 medium) – I used Gala

Preheat oven to 350*F. Mix the first eight ingredients in a large bowl and whisk. In another bowl, combine the flour, baking powder, baking soda, salt, and sift. Add the dry mixture to the wet mixture and stir until combined but don’t overmix. Add the grated carrot and apple and fold. Pour batter into a buttered and floured pan. Bake for about 35 minutes (check with a knife until it comes out clean).

My favorite thing about this bread is how moist it is – because of the carrot and apple.
