Apple Cinnamon Bread

I wanted to use my loaf pan again so – apple cinnamon bread! I found this recipe here and followed it exactly.

  • ½ cup packed brown sugar
  • 1½ teaspoon ground cinnamon
  • ⅔ cup white sugar
  • ½ cup butter, softened
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ cup milk
  • 1 large apple, peeled and finely chopped
In one bowl, mix the brown sugar and cinnamon. In another, combine the white sugar and butter and blend. Then add eggs and vanilla and blend. Finally, add flour, baking powder, milk, and mix. Pour half the batter into a buttered and floured pan. Cover with half of the chopped apples and then half of the sugar/cinnamon mixture. Scoop the remaining batter into the pan and top with the remaining apples and sugar/cinnamon mixture. Bake for about 40 minutes at 350 degrees.

Modifications: I’d like to try something different with the apples – caramelizing them before maybe? Also some type of glaze would go nicely on this bread. Also, the bread came out a bit dry for my liking.
