Butterscotch Blondies

My birthday involved two cakes and tons of friends. Couldn’t think of a better way to ring in 22… Despite the abundance of sweets, I baked blondies with my friends. We adapted this recipe.


  • 1/2 cup unsalted butter, softened
  • 2 cups dark brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup butterscotch chips
  • 1/2 cup dark chocolate chips
  • 1/2 cup fat free sweetened condensed milk

Cream butter and sugar in a bowl. Mix in the eggs and vanilla. In a separate bowl, combine the flour, baking powder, and salt. Combine the wet and dry ingredients. Press half the batter into a buttered 9″ square pan. Sprinkle the butterscotch and chocolate chips on top and pour the condensed milk over. Press the remaining batter on top. Bake for 33 minutes at 350*F.

Overall, I love how gooey these are (because of the condensed milk). They were a bit too sweet for my liking (tasted like candy) – but this might have been my perception because of overdosing on sugar all day long.
