White Chocolate Cranberry Cookies

Apparently, I’m almost done with my first semester of med school (surreal). I made these for my small group holiday party last night! I found this recipe here.

  • 3/4 cup unsalted butter, softened
  • 3/4 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup white chocolate chips (I used Ghirardelli)
  • 3/4 cup dreid cranberries

Cream the butter and both sugars. In another bowl, sift the flour, cornstarch, baking soda, and salt. Combine the wet and dry ingredients and fold in the white chocolate chips and dried cranberries. Cover the dough with foil and chill in the fridge for at least 2 hours. Bake at 350*F for 8-10 minutes. The cookies will look really soft when they’re out of the oven but will firm up as they cool!

These cookies turned out amazingly soft and really tasty.

Happy holidays!!
