Pecan Pie Cheesecake

A couple friends & I decided to have a late Friendsgiving last Sunday. We ate lots & rewatched some Friends thanksgiving episodes & played games… it was pretty great.
Pecan pie is my all time favorite, and I like cheesecake too – so I made this pecan pie cheesecake (found the recipe here).
  • crust
    • 1 & 3/4 cups Nilla wafers
    • 1/4 cup light brown sugar
    • 1/3 cup butter
  • pecan pie filling
    • 1 cup granulated sugar
    • 2/3 cup dark corn syrup
    • 1/3 cup butter
    • 2 large eggs
    • 1 cup chopped pecans
    • 1 teaspoon vanilla extract
  • cheesecake filling
    • 3 (8-ounce) packages cream cheese
    • 1 & 1/4 cups light brown sugar
    • 2 tablespoons all purpose flour
    • 4 large eggs
    • 2/3 cup heavy whipping cream
    • 1 teaspoon vanilla extract
  • optional dulce de leche sauce

Use a food processor to grind the Nilla wafers. Combine these crumbs with brown sugar. Still in melted butter and press mixture into a 9-inch springform pan. Bake for 6 minutes at 350*F.

Combine all the pecan filling ingredients in a saucepan, stir, and bring to a boil over medium high heat. Reduce heat to maintain a simmer and cook while stirring for 8 minutes. Be careful not to overcook the filling or it will burn! Pour on top of the prepared crust. *Caution* the filling will be very hot!! Do not burn yourself (like I did).

Beat the cream cheese with an electric mixer. Add the brown sugar and flour. Add the eggs one at a time and beat in between. Add the cream and vanilla and stir until just combined. Pour this mixture over the pecan filling. Bake at 325*F for 1 hour. Then, turn the oven off and crack it open. Leave the cheesecake in for 1 more hour. After, remove the cheesecake and let it cool. Refrigerate overnight. Top with dulce de leche to hide cracks in the cake >:)


Overall: delicious. However, the pecan filling is very sticky and hard to cut! Definitely needs modifications… maybe cook the pecan filling for less time!
