single serve chocolate chip cookies

Sometimes I’m not patient enough to mix dough, chill it, and finally get to eating it 2 hours later.

Sometimes I want chocolate chip cookies right now.

These fit my demands perfectly, since in 20 minutes you can go from conceiving the idea of baking cookies to sitting down with a cold glass of milk devouring them. Added bonus: I used one bowl for the entire dough, which means less clean up!!


  • 2 tablespoons butter
  • 2 tablespoons dark brown sugar
  • 1 tablespoon granulated sugar
  • Pinch of salt
  • ¼ teaspoon pure vanilla extract
  • 1 egg yolk
  • ¼ teaspoon baking soda
  • ¼ cup all-purpose flour
  • 3 heaping tablespoons semisweet chocolate chips
Combine all ingredients in a mixing bowl. Form two balls on a baking sheet several inches apart. Bake for 8 minutes (or until edges are brown) at 350*F. When you remove baking sheet from oven, bang it on the counter top to deflate the cookie/give it a wrinkly appearance.
