italian baked eggs

This is a great breakfast-all-day kind of meal. Really filling and easy to make! I bought ramekins today specifically to try it out. Inspiration for this recipe is from here but I scaled it back to feed one:


  • 1/2 cup marinara sauce
  • 2 large eggs
  • 1/2 cup 2% milk
  • 1/2 cup shredded four cheese blend
  • 1 tablespoon grated Parmesan
  • salt and ground pepper (to taste)
  • basil seasoning

Start by pouring the marinara on the base of a 9 ounce ramekin. Crack the eggs on top and add the milk, cheese blend, and parmesan. Do not mix. Add salt and pepper to your likening. Bake at 425*F for 15-20 minutes (keep checking, it should be bubbly/browning when done!). Add basil seasoning on top and serve with buttered toast (yum).
