Oreo M&M bars

I don’t think I baked during the entire block of microbiology & immunology (save for the banana bread I made during test week and ate continuously throughout it – no regrets).

Yesterday one of my med school friends came over, we made these loaded bars, and caught up on The Bachelor (which we have concluded has to be scripted… *rolls eyes*)

The recipe is super easy & quick:

  • 1/2 cup unsalted butter
  • 1 large egg
  • 1 cup light brown sugar
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 18 Oreo Cookies, chopped in fourths
  • 1/2 cup M&M’s

Melt the butter and mix with egg, brown sugar, and vanilla until smooth. Add in the flour until combined (don’t overmix). Stir in the Oreos. Pour the batter into a prepared 8 x 8 pan and sprinkle the M&Ms on top. Bake for around 20-25 minutes at 350*F.


Verdict: a good quick bake fix, but maybe a little too sweet for my needs… (is that possible?). I LOVE baking with Oreos though- never a dissapointment.
