Pumpkin cream cheese muffins

It is officially the BEST season of the year! I’ve already made 2 pumpkin pies and here is the latest. I found this recipe here!


  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 3/4 cups all purpose flour
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract (or maple syrup)
  • 8 oz cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract (or maple syrup)

Sift flour, pumpkin spice, baking soda & salt in a bowl. Set aside.

In another bowl, whisk pumpkin, sugar and brown sugar. Add eggs, vegetable oil and vanilla (or maple). Combine two bowls and fill lined muffin tins.

In another bowl, beat cream cheese and sugar, egg yolk & extract (or maple). Top each muffin with about 1 tablespoon of the cream cheese mixture and use a toothpick or knife to swirl the batter. Bake for 20-22 minutes at 375*F.
